WINE YEAST PROFILES


MONTRACHET:
Great all-purpose wine yeast. Good for full-bodied reds and whites.
Avoid using Montrachet with Zinfandel or any highly sulfured grapes.

PASTEUR RED:
Fast and strong fermenting for full bodied reds. Preserves fruit flavors and colors while encouraging complex aromas. Also good for cherries and berries. Available in pure liquid culture form during grape season.

CÔTES DE BLANCS:
Identical to "Epernay" strain. Slow and cool fermenter producing little foam. Use for whites and fruit wines. Good for light style Pinot Noir. Avoid Chardonnay. Good for apples.

PASTEUR CHAMPAGNE:
Fast, dry, complete fermenting for light bodied wines. Good for stuck wines.
Despite the name, this yeast is not generally used for producing sparkling wine. Use Premier Cuvée instead.
Available in pure liquid culture form during grape season.

PREMIER CUVÉE:
Recommended for reds or whites. Also a great Champagne yeast. Fast, clean, and neutral. Also used for Sauvignon Blanc, White Zinfandel, Peach, Pear, Apricot, and Plum.
