Campden Tablets:

One crushed tablet per gallon 12 hours before adding wine yeast inhibits growth of bacteria and wild yeast.

Pectic Enzyme:

1/2 tsp. per gallon aids pressability and juice extraction of most fruit--aids clarification.

Yeast Nutrient:

1/4 Teaspoon per gallon provides essential food for rapid yeast growth and inhibits formation of hydrogen sulfide.

Acid Blend:

Use as necessary to raise total acid (see acid test kit). A blend of Malic, Tartaric, and Citric acids compatible with grape or other fruit wines.

Citric Acid:

Used as a preservative and to treat barrels.

Malic Acid:

The principle acid in apples, this is used to adjust acid content.

Tartaric Acid:

The principle acid in grapes, this is used to adjust acid content.

Grape Tannin:

Maximum of 1/4 teaspoon per gallon in fruit wines or in grape "second" wines. Helps wines age without excessive oxidation and aids clarification.

Corn Sugar (Dextrose):

100% fermentable sugar used to increase the potential alcohol in wine or beer. Measure with hydrometer. Better than cane sugar for fermentation.

Chlorine Detergent:

A stronger cleaner used for bottle washing, etc. Highly recommended for beermakers.

Soda Ash:

Used to "sweeten" new oak barrels before filling with wine. Also used to "sweeten" primary and secondary fermenters.

Iodophor Sanitizer:

Sterilizer used by wineries and breweries to sanitize equipment. Useful for homebrewers and home winemakers. Non-corrosive to metals.

Sodium Bisulfite:

1/4 cup in a gallon of water makes a strong SO2 solution used to sterilize equipment and bottles. Should not be used as a source of SO2 in wine--use Campden Tablets for that purpose.

Sulphur Sticks:

Burned inside barrels or casks to sterilize before filling with wine.
