RECIPE INGREDIENT KITS

All the recipe kits below are formulated for a 5-Gallon batch and include all necessary ingredients (plus caps and strainer bags). An informational sheet, featuring the entire recipe and special instructions for brewing each batch, is included with each kit. Living and Working in Seattle, famous for its concentration of microbreweries, and in Washington, by far the #1 hop-producing state, has both spoiled and educated us. Feel free to ask us about styles or to modify our ingredient kits to your own tastes. Please specify pellet or leaf hops if you have a preference.

A BRIEF DEFINITION OF ALL-GRAIN BREWING

All-grain kits are ingredient kits designed with the advanced homebrewer in mind. They do not contain any malt extract, but instead the homebrewer extracts the sugars from the barley himself. This requires a much greater amount of time, equipment, and experience than many homebrewers have.

The processes involved are "mashing"--the breakdown of the grain's starches into sugars by a carefully controlled steeping process, and "sparging" or "lautering"--the controlled rinsing of the grains to wash the sugars away from the husks, thereby creating �wort.� If this wort were dehydrated into a thick syrup or powder, it would then be called "malt extract", the main ingredient that most homebrewers use regularly to brew their beer. It is only after mashing and sparging is completed that the all-grain brewer begins the boiling process that extract brewers are familiar with.

Although some commercial breweries brew with malt extracts, the vast majority go through the mashing and sparging proccesses on the large scale required for commercial operation. The disadvantages of duplicating this process at home are the time required (at least 4 hours) on brew day and the extra equipment and attention necessary for successful all-grain brewing. However, most grain brewers would agree that brewing from grains has rewards that are well worth the extra effort. The appeal for the homebrewer is the "from scratch" nature of all-grain brewing, allowing for complete control of every phase of the brewing process. Additionally (as you may note below), the cost of ingredients is greatly decreased when the brewer does his own "extracting."

AMERICAN PALE ALE: "Cascades Ale"

The explosion of microbreweries here in the Northwest has resulted in a Pale Ale style that has somewhat digressed from the English style. Usually hopped at a higher rate than the British Pales, and with American-bred hop varieties like Cascade and Centennial. Our recipe features the distictive citrusy flavor of the Cascade hop. Shp. AMERICAN LIGHT: "Industrial Lager"

CALIFORNIA COMMON: "Shoreline Steamer"

A California Common or �Steam� beer (a name coined by Anchor Brewing Co.) refers to a beer brewed with lager yeast at ale temperatures, usually with an ample supply of hops. You don�t have to be a hop fan to love an English Bitter. �Bitter� has been used synonymously with �Pale Ale� for centuries. This high-alcohol, surprisingly fruity brew has an aggressive flavor which mellows with a few weeks� age. BOCK: "Old Billy's Beard"

Get your malt here! A generous sweetness dominates this German lager, hailing originally from Einbeck. This style was created primarily for its nutritional value, to sustain the monks that brewed it through periods of fasting. A Bock�s malt flavor is not disguised by hops or roasted grains as it is in most Stouts and other hefty brews. PORTER: "Black Heart Porter"

A style steeped in tradition. During the 18th century, bartenders would blend three different beers from three different casks to create a more flavorful, complex beverage. Porter is rumored to have been brewed to replace these �three thread� beers, and named for the workmen that guzzled them.
