Grown in Washington. A newer multi-use hop with a nice citrus-flower
bouquet and medium-high acid content suited for bittering. Used
in American Ales and IPAs Alpha Acid 8-9%
Cascade
Grown in Washington. A finishing hop with great citrusy, floral
and spicy characteristics, growing popular as a bittering hop.
A Fuggle cross. Used in Ales and Light Lagers. Alpha Acid 4-7.
Centennial
Grown in Washington. Mainly used as a finishing hop, but can
be used for bittering. A strong version of Cascade. Used in
Medium to Dark American Ales. Alpha Acid 9-11.
Columbus
Grown in Washington. Brand new variety bred for high bittering
potential, yet with a pleasing nose. Used in IPAs and Strong
Ales. Alpha Acid 11-16.
Fuggle
Grown in England, Washington, and Oregon. A classic finishing
hop with a rounded, mildly spicy, floral aroma. Substitute Willamette
or Kent Golding. Used in English Ales, Pale Ales, Porters and
Stouts. Alpha Acid level 4-6.
Hallertau
Traditional German variety grown in Washington. A good all around
bittering and finishing hop with a mellow spicy fragrance. Used
in Dark and Light Lagers and Belgian Ales. Alpha Acid 3-6.

Grown in Bavaria and Munich. A versatile bittering and great
herbal, finishing hop with a mild, crisp and spicy fragrance.
Used in Wheats, Pilsners, Belgian Ales and American and German

Grown in Washington. A light, delicate, finishing hop, also
used as a flavoring hop. "Half sister" to Liberty.

Grown in British Columbia. A classic finishing hop. Fragrant
and mild aromas. Excellent for dry hopping Ales. Used in Pale
Ales, Bitters, Porters and Stouts. Alpha Acid 4-6.
Northern
Brewer
Grown in Washington. Primarily for bittering but with strong
flavors and very fragrant. A relative of Perle.
Used in Steam Beers, Dark English Ales, and German Lagers. Alpha
Acid 7-11.
Perle
Grown in Washington. A hybrid of Hallertau
and Northern Brewer. Primarily for bittering, but with pleasant,
slightly spicy aroma. Used in Lagers, Wheats, and Pilsners.

Saaz
Grown in the Czech Republic. A finishing hop that is spicy,
fragrant and flavorful. The Pilsner hop. Used in Continental
Lagers and Wheats. Alpha Acid 3-6.
Santiam
Grown in Washington. Noble-type hop, with aroma similar to
Tettnang and decent alpha acid for bittering. Used in Lagers,
US Ales and Pilsners. Alpha Acid 5-7.
