All of our American barrels are White Oak, hand coopered in the U.S. with very light toast. Our French barrels use premium Central France oak staves, air-dried for 24 months, resulting in mild almond and caramel overtones, no green wood or kiln flavors. Made in the traditional method. New barrels will require treatment with citric acid, soda ash, and sodium bisulfite. A standard bung should also be purchased.
